GF/ Vegan Pancake Recipe

Ingredients

Dry Ingredients:

1 Cup Almond flour 

1 Cup Millet Flour

½ tsp Salt

½ tsp Baking Soda

Wet Ingredients:

12oz Aquafaba mixed with 1 Tbsp Psyllium Husk (let sit for 10 minutes once mixed)

4oz Cashew Cream or coconut milk

1 Tbsp Lemon Juice

1 tsp Vanilla Extract 

Directions

  1. Mix the dry ingredients in a bowl

  2. Mix the wet ingredients in another bowl/container

  3. Mix the dry and wet ingredients together and let them sit for 10 minutes. 

  4. Heat a nonstick pan over medium heat. When it's hot, scoop in about ½ Cup of pancake batter at a time and cook each pancake for 3 to 4 minutes on each side (until browned). Repeat until all the batter is gone. 

  5. Serve with maple syrup, whipped coconut cream, and/or blueberry compote
