Vanilla Chia Pudding with Berries

Vanilla Chia Pudding

Ingredients

  • 3/4 cup plus 1 tablespoon chia seeds

  • 1 can full-fat coconut milk (coconut & water)

  • 2 cups water

  • 3 tablespoons maple syrup

  • 1/2 teaspoon vanilla extract

  • Fresh fruit for topping

  • Pinch salt

Additional Toppings (to be added when serving):

  • Fresh or dried fruit (e.g., berries, bananas, apples, raisins)

  • Nuts and seeds (e.g., almonds, walnuts, sunflower seeds)

  • Berry Compote

  • Coconut flakes

Instructions:

  1. In a bowl, mix chia seeds, coconut milk, water, maple syrup, salt, and vanilla extract.

  2. Stir well and let sit for 5 minutes. Stir again to break up any clumps.

  3. Cover and refrigerate for at least an hour. 

  4. Portion into 4 containers layered with fresh fruit. Seal tightly and refrigerate for at least 3 hours before serving. Store in the refrigerator for up to 4 days.
