Pepita Omelet with Roasted Garlic Crema and Parsley

If you’re looking for a delicious high-protein alternative to eggs, this Baked Pepita Omelet is for you. Great on its own or as a filling for sushi, breakfast casseroles, wraps, rolls, and more!

Baked Pepita Omelet

Ingredients:

  • 1 tsp Olive Oil

  • 2 Cups Pepita Cream

  • 1 oz Lemon Juice or ACV

  • ¼ Cup Red Bell Pepper, chopped

  • ¼ Cup Green Onions, chopped

  • ¼ Cup Parsley, minced

  • 1 tsp Garlic Powder

  • 1 tsp turmeric powder

  • ½ tsp thyme leaves, minced or ground

  • ¼ tsp Coriander Seed, ground

  • 1 tsp salt


Directions:

  1. Preheat the oven for 375 F 

  2. Use the oil to coat a 7” by 11” baking pan

  3. Add all the remaining ingredients to a mixing bowl and mix thoroughly.

  4. Pour the mixture into the greased pan and bake for 27 to 30 minutes; until the omelet is set, browned on the bottom, and very lightly browned on the top.

  5. Slice into squares and serve with chives and roasted garlic sauce. You can also use the patties to replace eggs in breakfast sandwiches, hand pies, casseroles, or burritos. 

  6. Refrigerate leftovers for up to 5 days or freeze for up to 1 month.
